01The range
Every everyday pack is 400 g





Golden corn flakes and whole roasted cashews, sweet against salt. The mild one in the range.





Sixty per cent peanut in a spiced gram-flour shell. The shell carries the spice, the nut the crunch.





Split green gram, fried loose and lightly salted. Every bead takes the same golden colour.





The hot one. Over a third split green gram, which keeps it crisp, with the chilli close behind.





Spiced papad, ready for the flame. Thirty seconds a side on the gas and it blisters crisp.

02How it is made
Four steps between a sack of whole pulses and a sealed 400 g pack, all under one roof in Gangashahar.
Moth, gram and split green gram arrive as grain and are milled here. Buying flour ready-made would be cheaper, and we would no longer know exactly what is in it.
Iodised salt, red chilli, ginger, black pepper, cardamom, clove and nutmeg. The bhujia ratio has not been rewritten in sixty years.
Modest kadhai loads keep the oil from tiring. It is slower than filling the vessel, and it is the difference between the first packet and the last tasting the same.

03Combo tins

05Since 1965
Mool Chand Agarwal started small in Bikaner in 1965, making bhujia on the edge of the Thar desert. His son Gopaldas joined him to push the quality further, and the two of them turned a local habit into a name people asked for by name.
Six decades on, the recipes have not moved much. The kitchen is now on Road No. 5 in the RIICO industrial area at Gangashahar, and the range has grown to sixteen everyday packets and nine combo tins, but the bhujia is still the reason people come back.
